An egg a day? I do, with toast and lately I've been adding avocado and tomato. Amazing. Since I don't eat a "regular" dinner I make sure that I get my protein early in the day. One piece whole grain bread, an egg cooked anyway you like, but I like mine slightly over medium, and fresh veggies. Tomorrow I am going to mix it up a bit and add sauteed spinach and mushrooms - oh and maybe a little grated, melted Swiss cheese. Yeah, that's how I do it.
